Say what? Yes, blackberries add a little sweetness to this fun thin crust pizza. I used a large 16" pan to ensure a thin crust. If you don't have a large pan, use 2 smaller pans and cut the dough in half. Sprinkling a little vegan feta cheese over pizza before serving added another layer of flavor, but completely optional. No rules, just yum.
INGREDIENTS Pizza dough of choice or homemade dough 3/4 cup pizza sauce 7 oz vegan mozzarella cheese 1/2 cup fresh basil, cut in thin strips (chiffonade cuts) 4 slices plant-based bacon, chopped 1 pint blackberries
1/2 tsp sugar Olive oil Vegan feta cheese for serving(optional)
DIRECTIONS
1. Add 1 to 2 Tbsp oil to a 16" cast iron pizza pan or roasting pan or baking sheet. Place dough into pan and turn over to coat evenly with oil. Press dough flattening it slightly. Cover tightly with plastic wrap and let dough sit at room temperature for 2-5 hours to rise. *I preheat my oven to 170°F then turn it off. After a few minutes, place pan with dough in oven to rise.
2. Preheat oven to 500°F. Press dough around pan until it fills in every corner, popping any large bubbles that appear.
3. Spread sauce over dough all the way to the edge, followed by half the basil strips and vegan cheese. Toss plant-based bacon with 1 tsp olive oil then place pieces onto pizza. Toss blackberries in 1/2 tsp sugar then place blackberries evenly over pizza.
4 Bake 14 to 15 minutes. Sprinkle remaining basil strips over pizza before cutting. Serve with plant-based feta cheese if desired.
