Say what? This decadent Rachel Ray recipe goes vegan with Beyond Sweet Italian Sausages and Follow Your Heart Smoked Gouda Cheese. **Note-Although caramelized onions take 30-40 minutes to prepare, I guarantee it's worth the effort. OMG yum.
(SMOKED GOUDA MAC)
INGREDIENTS
1 lb macaroni/pasta of choice
4 Beyond Sweet Italian sausage
1 1/2 cups caramelized onions (recipe below)
4 cups plain plant milk
3 Tbsp vegan butter
3 Tbsp flour
2 x 7 oz packages Follow Your Heart Gouda, grated
Salt and pepper
DIRECTIONS
1. Preheat the oven to 350 degrees . In a large pot of boiling salted water, cook the pasta according to package directions. Drain and set aside.
2. While pasta is cooking place a large skillet over medium-high heat. Add the sausage and cook, breaking up with a spatula until browned, approximately 5 to 7 minutes. Remove sausage from skillet, set aside.
3. Heat plant milk in microwave or in a saucepan. Return the large skillet to the stove, add the butter and melt over medium heat. Add the flour and cook, whisking constantly, for 2 minutes. Whisk in the hot plant milk, 1/4 cup at a time, and continue whisking until the sauce is smooth. Bring to a boil and continue to cook for another 2 minutes.
4. Reserve 1 cup vegan cheese and 1/2 cup caramelized onions for topping. Wisk in vegan gouda until the cheese is melted, about 2 minutes; season to taste with salt and pepper. Stir in caramelized onions and sausage. Pour mixture over pasta, stir until well combined.
5. Spray a 9-by-13-inch baking dish with nonstick spray. Add the pasta mixture in an even layer. Sprinkle the remaining caramelized onions and gouda cheese. Cover and bake 30 minutes. Let rest for 10 minutes before serving.
CARAMELIZED ONIONS
3 Tbsp vegan butter
2 Tbsp olive oil
2 1/2 lbs onions, thinly sliced
Salt and pepper
2 tsp sugar
1. In a large skillet, melt the vegan butter in the olive oil over medium-high heat. Add the onions and season well with salt and pepper. Cook, stirring occasionally, until the onions begin to soften, about 5 minutes.
2. Stir in the sugar and continue to cook, scraping the browned bits off the bottom of the pan occasionally, until the onions are golden brown, approximately 20 to 30 minutes. I decreased the heat to medium after 5 minutes after adding the sugar.
