Another classic comfort food goes vegan with plant-based substitutes including ham (I used Sweet Earth brand), butter, milk and cheese. Anything they can make, we can make vegan!
INGREDIENTS
3 Tbsp plant-based butter
1 small onion, diced
3 Tbsp all-purpose flour
2 &1/4 cups plain plant-based milk, heated
3/4 tsp salt
1/4 tsp pepper
1.5 lbs potatoes, thinly sliced
6oz vegan ham slices, chopped
1 cup frozen peas
7oz vegan cheddar cheese, shredded
DIRECTIONS
1. Preheat the oven to 350° F.
2. In a medium sized skillet over medium heat add plant-based butter. Once melted, sauté onions until translucent, approximately 8 minutes. Sprinkle flour over onions and continue to cook until flour is lightly brown, approximately 2 to 3 minutes. Slowly wisk in the milk and continue whisking until the sauce has thickened, approximately 5 minutes. Add salt and pepper, mix well and remove from the heat.
3. Spray a deep baking dish with non-stick cooking spray. Layer bottom of dish with 1/3 of potatoes. Cover with 1/2 the plant-based ham, 1/2 the peas and 1/3 shredded vegan cheddar. Pour 1/3 the cream sauce(approximately 3/4 cup) over potatoes, ham, peas and cheese. Repeat with 1/3 potatoes, remaining plant-based ham, remaining peas, 1/3 shredded cheese and 1/3 cream sauce. Top with remaining 1/3 potatoes then pour remaing sauce over casserole. Top with remaining vegan cheese.
4. Cover and bake for 60 minutes. Remove cover and continue to bake for another 20 minutes. Let stand 10 minutes before serving.
