CHICK'N SEITAN


I found a simple and quick recipe for chick'n seitan. Mix it up and simmer for 45 minutes and it's ready to use in any application. Oh and it costs pennies to make. Win, win.


INGREDIENTS

3/4 cup vital wheat gluten

1.5 Tbsp garbanzo bean flour

1 Tbsp Bragg's liquid aminos

1 tsp onion powder

1 tsp celery salt

1 tsp poultry seasoning

1/8 tsp black pepper

1 Tbsp nutritional yeast

1/2 cup chick'n flavored vegan broth

1 Tbsp extra virgin olive oil

1/2 tsp white or apple cider vinegar


DIRECTIONS

1. Combine dry ingredients


2. Add broth and olive oil. Mix until dough forms. Knead dough 2-3 minutes in stand mixer using dough hook on speed #2. Alternately knead by hand. Form loaf.


3. Cover with towel, let sit for 15 minutes.


4. Bring 4 cups chick'n flavored vegan broth to boil. Wrap loaf loosely in parchment paper with ends twisted and folded under. Gently boil seitan loaf for 25 minutes, unwrap loaf and return to gentle boil for another 20 minutes.


5. Remove loaf and place in container of cold water. Refrigerate. Ready to use when completely cooled. Refrigerate for up to 2 weeks.
