Soy curls are the perfect vegan chicken-like strips used to make fajitas. I make fajitas with my own fajita spice blend, but decided to change up the flavor a little by using chipotle peppers in adobo. So good. If you prefer straight up fajitas, I've included my fajita spice blend as well.
INGREDIENTS
1/2 bag Butler soy curls
1.5 tsp ground cumin
1 tsp chili powder
2 to 3 bell peppers, sliced
1 onion, sliced
3 garlic cloves, minced
1 Tbsp chipotles in adobo, chopped
Juice from 1/2 lime
Flour tortillas
Chopped cilantro
Toppings as desired: vegan cheese, vegan sour cream, avocado/guacamole.
DIRECTIONS
1. In a bowl, soak soy curls in boiling water for 10 minutes. Drain and pat dry. Toss soy curls with cumin, chili powder, and 1/2 tsp salt and 1/4 tsp pepper.
2. In a large skillet over medium-high heat, heat 1 Tbsp oil. Add the seasoned soy curls and saute until cooked through and browned, approximately 7 minutes. Remove from skillet, set aside.
3. Increase heat to high and add another 1-2 Tbsp oil. Add peppers, onions, and garlic to skillet and cook, stirring occasionally, until soft, 4 to 5 minutes. Stir in chipotles and lime juice, then return soy curls to skillet and toss to combine. Season with salt and pepper.
4. Serve fajita mixture on warmed tortillas and sprinkle with chopped cilantro. Add toppings of choice (shredded vegan cheeses, avocados or guacamole, vegan sour cream) as desired.

1 Tbsp chili powder
1 1/2 tsp cumin
1 tsp ground black pepper
1 tsp salt
1/2 tsp smoked paprika
1/2 dried oregano
1/4 tsp garlic powder
1/4 onion powder
1/4 tsp crushed red pepper
