King oyster mushrooms are versatile and meaty in texture. By running a fork down the mushroom, it "pulls" apart into strings that are perfect for BBQ pulled sandwiches. Toss them in spices, fry them in a pan then bake to perfection. So easy, so good. I served them topped with red onions and vegan mayonnaise with a side of crispy potatoes. Recipe is for 2 sandwiches.
INGREDIENTS
1 lb king oyster mushrooms
1/3 cup BBQ Sauce
1 - 2 Tbsp beer (optional)
2 buns
1.5 Tbsp BBQ or 'pork' seasoning
1/2 tsp granulated garlic
Salt & pepper to taste
DIRECTIONS
1. Pre-heat the oven to 400°F
2. Shred the mushrooms by running a fork along the fibres, away from the cap. Pull apart with fingers and place in a large bowl. Toss with garlic, BBQ seasoning and a pinch of salt and pepper; toss to coat.
3. Heat a large skillet over high heat with 1 Tbsp oil. Add mushrooms and cook until brown on all sides, stirring occasionally, approximately 8 minutes. Remove from skillet back to bowl and toss with BBQ sauce (and beer if desired).
4. Transfer mushrooms onto a baking sheet lined with parchment paper. Bake 15 minutes until browned and caramelized. Serve on toasted buns.
