POT STICKER SOUP



Super busy with little time for dinner? This simple recipe is ready in under 30 minutes. I love Trader Joe's Vegetable Pot Stickers so I made a big pot of soup with them. I used 2 bags of potstickers because yum. I also found a handful of pea pods in my crisper so I threw them in too; no rules, just yum. **Option-pan fry pot stickers then throw them in the soup before serving.


INGREDIENTS

1 to 2 package Vegetable Pot Stickers

6 cups vegetable broth

2 cups water

1 Tbsp soy sauce

1 Tbsp minced ginger

1/2 to 1 Tbsp sambal oelek(or 1 tsp sriracha)

1 tsp sesame oil

1 Tbsp white miso paste

2 carrots sliced

1/2 napa cabbage, sliced

3 bunches baby bok choy

1/2 cup edamame

Green onions & chow main noodles for toppings

DIRECTIONS

1 In a large stockpot, combine vegetable broth, soy sauce, ginger, sambal oelek(or sriracha) and sesame oil. Bring to boil then add miso paste and stir until dissolved.


2. Add carrots. Return to boil then lower heat and simmer 5 minutes.


3. Add potstickers, napa cabbage and baby bok choy. Increase heat to boil then reduce to simmer for 5 to 6 minutes. Stir in edamame during last minute of cooking.


4. Serve topped with green onions and crunchy noodles.
