Step up your game with this simple and delicious soup made with pantry staples. Once you've added roasted red peppers to the mix, you'll never go back to ordinary tomato soup again. This soup goes perfectly with OOEY-GOOEY VEGAN GRILLED CHEESE SANDWICH
INGREDIENTS
1 medium white onion, chopped
4 cloves garlic, minced
28 oz can crushed tomatoes
1 cup roasted red pepper, chopped
2 cups vegetable broth
1/2 Tbsp fresh chopped basil or 1/2 tsp dried(or thyme if preferred)
Salt & pepper to taste.
DIRECTIONS
1. Saute onions in stock pot or Dutch oven over medium-high heat until softened, approximately 2 to 3 minutes.
2. Add garlic and basil and continue to saute for another minute.
3. Add remainder of ingredients, bring to boil, then simmer on low for 20 to 30 minutes. Alternately use instantpot, 5 minutes with natural release.
4. Remove from heat. Blend using immersion or stand blender. Add salt & pepper to taste.
