Simplicity tastes so good. With Violife brand vegan feta cheese, we can have it all. I served this salad with garlic toast made with Miyoko vegan butter, fresh garlic and parsley. Life is good. Yum.
DRESSING
1/4 cup red wine vinegar
2 Tbsp lemon juice
1/2 tsp Dijon Mustard
2 garlic cloves, minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1/3 cup extra virgin olive oil
SALAD
Lettuce greens of choice (I used romaine)
Cherry tomatoes, halved
Red onion, thinly sliced
English cucumbers, peeled and chopped
Kalamata olives
Violife vegan feta cheese, crumbled
DIRECTIONS
1. Combine dressing ingredients and mix well.
2. Toss salad ingredients with as much Greek dressing as you like.
