Snowball cookies are not only tasty but simple and fun to make. Veganizing them is easy by using vegan butter. I used Earth Balance sticks. Yum & fun.
INGREDIENTS
1 cup vegan butter, softened
2 cups powdered sugar, divided
2 teaspoons pure vanilla extract
2 cups all purpose flour
3/4 cup pecans, finely chopped
1.5 cups powdered sugar, for rolling
DIRECTIONS
1. Preheat the oven to 350°F.
2. Cream together vegan butter, only 1/2 cup powdered sugar and vanilla in a stand mixer or hand mixer. Mix in flour and pecans on low speed until combined.
3. Roll into ~ 24 balls. Place onto parchment lined baking sheet. Bake for until bottoms are lightly brown, approximately 14 to 16 minutes. Let cool for 10 minutes.
4. Place remaining powdered sugar in a bowl. Roll the cookies in the powdered sugar, then place them back onto the baking sheet.
5. When cookies are completely cooled, roll them a 2nd time in the powdered sugar.
