
Looking for a hearty soup to feed your family fast? This sopa de fideo is ready in under 30 minutes, including prep. Fideo is a thin pasta like vermicelli. If you can't find fideo, vermicelli(or thin spaghetti broken up into 2" pieces) will work too. So yum. So filling.

INGREDIENTS
12 oz soy chorizo
4 cups 'no chicken' vegetable broth
15 oz can black beans, drained and rinsed
15 oz can fire roasted tomatoes
1 small white onion, roughly chopped
2 cloves garlic, peeled
3 Tbsp chili powder
1 tsp oregano
5 oz(1 1/4 cup)Fideo pasta
1 cup frozen corn kernels
Toppings options- sliced avocado, chopped cilantro, vegan sour cream, vegan cheddar shreds, tortilla/corn chips, chili peppers

DIRECTIONS
1. Place broth, beans, tomatoes, onions, garlic, chili powder, oregano and 1/2 tsp salt into a blender. Blend on high for approximately 1 minute. Set aside.
2. In a stockpot over medium-high heat with 1.5 Tbsp oil, cook soyrizo, breaking up with spatula, until browned, approximately 6 minutes. Remove from heat. Set aside.
3. Return pot to medium-high heat with another 1 Tbsp oil. Add pasta and cook, stirring continuously, until lightly browned, approximately 2 minutes. Stir in frozen corn, then add liquid from blender and soyrizo. Bring to a boil, then reduce heat to simmer. Cook, stirring occasionally for 12 minutes.
4. Remove from heat and let stand for 5 minutes to thicken. Serve with toppings of choice.
