
Any excuse to make Thai peanut dressing. Thai Coleslaw is a tasty salad that works well as a side dish or on it's own. Note the optional sriracha or sambal oelek if you'd like a little heat. I left it out because I served it with Firecracker Tofu.
INGREDIENTS
6 cups shredded cabbage
2 carrots, peeled and shredded
1 red bell pepper, thinly sliced
4 scallions, sliced
1/2 cup fresh cilantro, chopped
1/4 peanuts, chopped(garnish)
(DRESSING)
1/4 cup creamy peanut butter
Juice from 1 lime(2 Tbsp)
2 Tbsp rice vinegar
1.5 Tbsp soy sauce
2 Tbsp maple syrup
1 Tbsp sesame oil
2 tsp minced ginger
1 clove garlic, minced
*optional 1/4 tsp sriracha or sambal oelek
DIRECTIONS
1. In a large bowl, toss together cabbage, carrots, red pepper, scallions and cilantro.

2. Wisk together dressing ingredients
3. Pour dressing over salad and toss to coat. Sprinkle with chopped peanuts and serve immediately.
